  • Raw nendran bananas – 4 large

  • Coconut oil – for deep frying

  • Salt – 1 tsp (dissolved in 2 tbsp water)

  • Red chilli powder – 1 tsp (adjust to taste)

  • Black pepper powder – ½ tsp (optional)

  • Curry leaves – 1 sprig (washed & dried)

  • Turmeric powder – ¼ tsp (optional, for colour)

1. Prepping the bananas

  • Peel bananas, soak briefly in turmeric water, and dry completely.

  • Keep ready for slicing.

2. Frying

  1. Heat coconut oil in a deep pan/kadai.

  2. Slice bananas directly into hot oil using a slicer.

  3. Fry on medium flame until almost crisp.

  4. Add a spoon of salt water carefully (chips will sizzle). Fry until fully crisp.

  5. Just before removing, add curry leaves and let them turn crispy. Remove everything together.

3. Seasoning

  1. Mix chilli powder + pepper powder in a small bowl.

  2. While the chips are still hot, sprinkle the spice mix and toss well so the flavour coats evenly.

4. Cooling & Storing

  • Spread on paper to drain oil.

  • Cool completely before storing in an airtight container.
